Dried, or dehydrated vegetables, are a little known secret that is slowly making its way through the "people in the know" down to the working-class consumer. For just a fraction of what canned or frozen vegetables cost, with a better nutritional value and no sodium, you can buy dehydrated vegetables in bulk. Easily rehydrated, you can use them like the fresh vegetables that you would have had to wash, peel and prepare. Use them in all of your favorite recipes or eat them just like you would if they were canned, fresh or frozen. Those who have say that there is little discernible difference in the flavor or appearance. It depends upon the vegetable, but most dried vegetables will gain 200% to 350% in volume and 325% to 600% in weight. That means that just a couple of tablespoons may do for that pot of soup or as a side dish. Their shelf life has greatly improved over the years too. Having only a 1% to 3% moisture content, they will not spoil, go rancid or get freezer burn as long as you store them in a dry place. Try 'em, you'll like 'em! |
